All forms of oregano have a strong flavour when fresh, dried or used in dressings and marinades. Meat dishes can be greatly improved by using a marinade of BBQ Herbs. Blend one or more of the following herbs, to taste, oregano greek, BBQ thyme, rosemary and lemon verbena. Add to the marinade tblsp olive oil, 1 tblsp lemon juice, 1 clove crushed garlic. Soak meat in marinade for one hour or more then baste regularly whilst cooking.
