Description

A strong flavoured condiment used in Asian and European cuisine. Horseradish is closely related to mustard and wasabi and is often used in similar ways. Partners with ginger, garlic, chilli onions - use with strong meats and root vegetables. High in Vitamin C and potassium.

Horseradish is native to southern Europe but  over the last 3000 years has spread widely around the world .Grate and mix with vinegar and cream to make a classic horseradish sauce that is used as a condiment for roast beef. Mix with mayonnaise to make a creamier spread for sandwiches. The harvested roots are best stored in fresh water. Once cut it loses its flavour, only do so when ready to use. 

Horseradish can be tricky to get started but once established it weill take off so should be planted in a large container bed. It need warm summer weather and a cold winter to cause the leaves to drop and the plant to go into dormancy.

Harvest after leaf drop. If left more than a year the tubers will become large and fibrous. These are not suitable for use but if cut ip and replanted will be okay the following year.
